This chicken salad recipe makes a delicious, simple meal and is great for busy weeknights. With tender chicken, grapes, cranberries, celery and roasted pecans; it’s wonderful as is, or as a sandwich!
There are so many versions of chicken salads out there, but this one is our family’s favorite. It’s fresh and the combination of the different textures and flavors go together so well! We rarely, if ever, have leftovers from this meal, so I know it’s a winner!
It is great as is, or can be eaten with crackers or as a sandwich. You can also lighten up the recipe and make it completely clean eating with a Whole30 or Paleo-approved mayo (I really like this one).
